ANDOUILLE SMOKED CAJUN SAUSAGE,PEPPERS,ONIONS, AND POTATO HASH

INGREDIENTS
1 (14 ounce) package Kaydem Artisan Sausage (Cajun style spices & Garlic)
Sliced
1/2 yellow, red and orange bell pepper, sliced
1 onion, sliced
6 small potatoes, diced
2 tablespoons olive oil
3 tablespoon Italian herbs
dash salt
1 tablespoon butter
A few sprigs of thyme

Directions
Parboil the potatoes in boiling water and a dash of salt for 5 minutes.
Drain the potatoes and let it sit to evaporate all the steam.
Meanwhile in a separate pan, brown the sliced sausage for 10 minutes in 1 tablespoon of olive oil over medium high heat.
Remove the sausage from the pan and set aside. Add the peppers and onions to the pan and cook for 5 minutes, stirring occasionally.
Place the peppers and onions aside and add butter to the same pan. Add the parboiled potatoes, thyme and Italian herbs and sauté until golden brown for 10-15 minutes.
Once done, add the cooked peppers and onion with the sausage and mix well until combines. Enjoy
