Apple, Ham, & Spinach Quiche


1 9-inch unbaked pie crust
1/3 cup finely chopped onion
3 tablespoons chopped red and green bell peppers
1/3 cup chopped red apples
1/2 cup spinach (frozen or fresh)
4 large eggs
1 cup Daisy Brand Sour Cream
2 cups diced fully cooked ham
1/2 cup shredded mild Cheddar cheese
1 tablespoon Italian herbs
1 teaspoon dried thyme


Poke holes on the inside of the pie crust with a fork. Line the inside of the pie crust with foil and bake at 350 degrees for 8 minutes. Remove the foil and bake for an additional 5 minutes or until the crust is set and dry. Remove the crust . Sauté the onions, peppers, ham, and apples in the butter for about 4 minutes then add in your spinach and sauté for an additional 3 minutes or so.. Combine the vegetables with the remaining ingredients and lightly whisk and pour the mixture into the pie crust. Bake the quiche at 350 degrees for 40 minutes or until the center is set. Let stand for 10 minutes before cutting.
