3 medium redskin potatoes ( boiled peeled and roughly chopped and cool down)
1/2 carrot grated (squeeze the liquid out of the carrots)
salt to taste
1 medium onion chopped
2 sprigs of scallion
1 small jalapeno finely chopped
1 tablespoon thyme
1 teaspoon paprika
1/2 teaspoon chili powder
1 teaspoon chopped or minced garlic
Oil for frying
Boil the potatoes in salted water. After the potatoes are cooked, peel and roughly chop, then set aside to allow the potatoes to cool and evaporate some of the steam.
Saute the chopped onion, grated carrots,scallion,garlic and jalapeno pepper for about 3 minutes.
Add the sautéed mixture to the potatoes. Add the thyme,chili powder, paprika,and salt taste.
Mix well together and then form into small to medium size balls.
Heat the oil on medium high heat.Once the oil is hot enough you can add the potato balls to the pan. Make sure not to overcrowd the pan.Turning occasionally to brown on all sides.Cook until golden brown.
Remove with a slotted spoon onto a paper towel with a plate and Enjoy!!
