CINNAMON, CARROT & APPLE BREAD

Ingredients
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Dash of salt
3/4 cup grated carrots (I used baby carrots, a bit sweeter to me)
1 large Fuji apple, peeled, cored and grated
1 6 oz. container flavored yogurt (I used Yoplait Thick & Creamy Cinnamon Roll or Apple Fritter flavor, you can use any apple cinnamon flavored yogurt)
1 Large egg
1/2 cup light brown sugar
1/4 Cup sugar
1 tablespoon cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon almond extract
1 tablespoon vanilla extract
1/3 cup vegetable oil

TIP Squeeze all the excess juices out of the grated carrots and grated apple after you grate it.

Directions
Preheat your oven to 350 degrees.
Grease the bottom and sides of a 8×4 inch loaf pan.
In a large bowl, add the egg, oil, brown sugar, sugar, yogurt, and extracts and whisk to combine.
In another bowl whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Add the flour mixture to the wet mixture and mix or stir until combined.
Gently fold in the grated apples and carrots until combined.
Pour batter into the loaf pan and bake for about 50 minutes. Let it cool in the loaf pan for about 20 minutes , then remove from the pan slice and Enjoy!
