1 1/2 cups all purpose flour
2 1/2 tablespoons cocoa
1/2 cup butter, at room temperature
1 cup sugar
1 teaspoon white vinegar
1 large egg
1 teaspoon vanilla extract
1 1/2 teaspoons red food coloring
1 teaspoon corn starch
3/4 teaspoon baking powder
1/8 teaspoon salt
1/2 cup powdered sugar
Preheat oven to 375 degrees. Line a baking sheet with parchment paper, and set aside.
Mix butter and sugar in a bowl with an electric mixer until fluffy, about 2-3 minutes. Add vinegar, mix until combined. Add egg, mix until combined. Add vanilla and red food coloring, mix until combined.
To the butter mixture, add flour, cocoa, corn starch, baking powder and salt. Mix on low until combined.
Roll dough into one inch balls and coat in a bowl of powdered sugar. Place on lined baking sheet, and repeat with the rest of the dough until you have a full pan.
Bake for 10-14 minutes or until the outside of the cookies are fully set, and the insides are almost done. Let cool on sheet for a few minutes and then move to a wire rack until completely cooled. Enjoy!
