2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white sugar
3/4 cup butter, softened
1/2 cup eggnog
1 tablespoon vanilla extract
1 teaspoon ground nutmeg
1 teaspoon cinnamon
For the Eggnog Frosting
3 cups powdered sugar
1 stick unsalted butter , softened
1/2 teaspoon vanilla extract
1/4 teaspoon rum extract
1/4 cup eggnog
Preheat oven to 300 degrees.
Combine flour, baking powder, cinnamon, salt and nutmeg.
In a separate bowl, cream sugar and butter until light. Add eggnog, vanilla, and egg.
Beat at medium speed with mixer until smooth. Add flour mixture and beat at low-speed until just combined. Do not over mix.
Drop by teaspoons onto ungreased baking sheet, 1 inch apart.
Bake for about 15 minutes or until bottoms turn light brown. Once done allow the cookies to cool before frosting.
To make the frosting
Cream the butter until light and fluffy. Add in the 3 cups of powdered sugar gradually, add the eggnog and extracts.
You can always add more eggnog for a smoother texture or for a thicker consistency , add a little more powdered sugar.
