Pumpkin Beignets

2 cups flour
1 cup buttermilk
1/3 cup sugar
1 tsp baking powder
dash of salt
1 tsp vanilla extract
1 tsp almond extract
½ tsp cinnamon
½ tsp nutmeg
1 can pumpkin puree 15oz
1 egg
vegetable oil for frying
powdered sugar (optional)


In a large bowl combine flour, baking powder, salt, cinnamon and nutmeg. In a small separate bowl whisk the egg, buttermilk ,sugar, pumpkin puree, vanilla, and almond extract .
Add the wet ingredients to the dry ingredients and combine well.
Heat oil in a deep saucepan to medium heat temperature. Drop batter by spoonful into hot oil. Fry until golden brown, about 3 minutes on each side .Beignets should rise to top of oil. Drain on a paper towel
Sprinkle your pumpkin fritters with some powdered sugar and Enjoy 🙂

    • Thank you so much . NO I don’t use a thermometer . I test the oil by just dropping a drop of the batter and if it sizzles that means the oil is ready . If the drop of batter doesn’t do anything I know that the oil isn’t hot enough as yet .I hope that help . 🙂
