Cinnamon sugar mix
1/2 cup sugar
1 tablespoon cinnamon
In a medium bowl, combine sugar and cinnamon. In another bowl, combine all dry ingredients–flour, baking powder , salt, nutmeg and cinnamon.
Whisk the egg and then whisk in the buttermilk. Combine the liquid and dry ingredients.
Slice apples into 1/4 inch thick slices using biscuit cutters to make rings out of the slices
Heat oil to 375°F. Dip apple rings into batter and fry until golden brown, about 4 minutes per batch, flipping halfway through. Transfer to a paper-towel-lined baking sheet to drain. Toss apples in cinnamon-sugar
