Beef Soup

Ingredients
1-2 lbs beef
1 pack Grace pumpkin soup mix
2 tablespoons butter
1 large carrot chopped
1 cup frozen spinach
3 medium potatoes cut in cubes
1/2 lb yuca cut in cubes
1 celery stalk chopped
1 large onion
3 sprigs fresh thyme
1 scallion chopped
1 scotch bonnet
6 balls of allspice
4 cups chicken broth
2 cups water
3 medium sweet potato cut in cubes
1 green banana
1 sweet plantain

1 1/2 cup flour (for dumpling)
1/4 cup water (for dumplings)
1 tsp. nutmeg (for dumplings)
1 tsp. cinnamon (for dumplings
1 1/2 tsp. sugar (for dumplings)
dash salt ( for dumplings)

Directions
(For the Dumplings) In a medium size bowl, put the flour ,sugar, cinnamon, nutmeg, salt and start with 1/4 cup water , Add water accordingly as you knead the dough Mix together to make stiff dough. Form into 7 to 8 round dumplings .
In a large pot add seasoned Beef chunks, onion, thyme, scallion and allspice balls . Sauté until meats begin to brown. Reduce heat to medium low, cover and let simmer for 20 minutes.
Add 4 cups of chicken stock and 2 cups of water cover and cook for 1/2 hour over medium heat.
After 1/2 hour, add potatoes, sweet potatoes, dumplings, green banana, sweet plantain, yucca, celery carrots, and butter. Stir and cover and simmer for about 35 minutes.
Then add frozen spinach, ” Grace pumpkin soup mix” , and scotch bonnet stir . Let everything come together and simmer for about 20 more minutes and soup should now be DONE!!ENJOY
