Coconut Sweet Bread


4 cups flour
2 tsp baking powder
2 tsp nutmeg
2 tsp cinnamon
2 cups grated coconut
1/2 cup vegetable oil
1/2 cup melted and cooled butter
1/2 cup sugar
1/2 cup brown sugar
1 cup carnation milk
2 tbsp almond extract
2 tbsp vanilla extract
1 tsp salt
1/2 cup raisins
1/3 cup maraschino cherries halved

Preheat oven 350 degrees
In a large mixing bowl mix together the flour, salt, nutmeg, cinnamon and baking powder.

In another bowl beat egg, sugars, carnation milk, oil, butter, extracts, grated coconut, and raisins

Pour you dry ingredients slowly into the wet ingredients until fully incorporated.

Grease your bread pans and pour in enough mixture about 3/4 the depth of the pan. You’ll need 2 pans. Top your breads with the maraschino cherries .When your oven is ready place the 2 pans on the middle rack and allow to bake for about 60 minutes.
Remove from the oven when done cooking all the way though. Then in a small bowl combine 1 tablespoon warm water and 1 tablespoon sugar to form a glaze. Using this glaze, brush the bread and then sprinkle the top with some sugar and place back in the oven from about 5 minutes.

Remove from the pans and allow to cool before cutting.
