Since I was a kid ,my mom and my grandmother use to make “baked macaroni & cheese” every sunday. It was always part of sunday meals. I grew up eating “baked macaroni & cheese” ever since. I have grown to love it and watch them making it in the kitchen . It has been made from my kitchen the same way too. It’s definitely one of those comfort foods .So cheesy and so yummy. What’s not to love with good ole mac & cheese.
1 box macaroni elbows
16 oz mild sharp cheddar cheese shredded
1 cup chipotle spicy cheese shredded
1 can evaporated milk
1/3 cup ketchup
3 tablespoons butter
1/2 cup yellow onion, finely diced
Preheat oven to 350 degrees F (175 degrees C).
Bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
Melt butter in a medium pot over medium heat. Saute onion for 2 minutes. Stir in evaporated milk and simmer for 2 minutes, stirring constantly. Add the shredded cheeses, both sharp cheddar cheese and chipotle spicy cheese until cheese melts and mixture thickens . Add the cooked macaroni and the ketchup into the cheese mixture and combine. Mix well. Pour the macaroni into a casserole dish.Top with a little cheese on top.
Bake in preheated oven for 30 minutes, or until hot and bubbly. Let cool 10 minutes before serving.
