Today I was in the mood for something light. I know salad may not be a” recipe” . I thought that I would share my salad recipe that I enjoyed for lunch today. It was a spinach salad with crisp bacon, hard boiled egg topped with shaved parmesan cheese .It was quite refreshing.
4oz baby spinach
4 bacon slices
1 Roma tomato sliced
1/4 cup of shaved Parmesan cheese
Fry bacon in a large skillet till crispy on both sides. Wash and drain the baby spinach and put in bowl. Cook the egg in boiling water and cook for 8 minutes. Once the bacon is cooked, take it out and put in on a paper towel to drain it from fat.Peel and half the egg , add chopped bacon with the sliced tomato in the bowl with the spinach.Seasoned with salt and pepper
