I changed my table cloth today to a spring color “green”. As I was dressing my table, I thought maybe I can bake green cookies.When I think of green cookies, I thought of mint. Which leads me to Andes, “Andes Crème De Menthe” chocolate!!! If you don’t take Andes chocolates away from me, forget about it .I will eat every piece in the bag one after another. So I figured I can bake some ” Andes” chocolate mint cookies and add a little food coloring to give it that green color effect . The mint green cookies remind me of when I was younger I use to love to go to Baskin Robbins ice cream shop and get the mint green ice cream on a sugar cone .Yummy !!
2 3/4 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup unsalted butter (at room temperature)
1 1/2 cup sugar
1 tsp vanilla extract
1 tsp mint extract
8-12 drops green food coloring
1 bag of Andes Crème de Menthe baking chips
Preheat oven 350 degrees. Sift the dry ingredients flour, baking soda, baking powder and salt together and set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg, add vanilla extract and mint extract. Gradually blend in the dry ingredients. Add green food coloring and mix until even colored. Fold in the Andes mints chips.
Form about 1 tsp balls and slightly flatten. Place onto ungreased cookie sheets. Bake for about 8-10 minutes. Let the cookies cool.
