Balsamic Vinaigrette Salmon Over Penne with Spinach &Grape Tomatoes

In the mood for something light, fit, healthy, refreshing and quick too? I thought I can do with a nice piece of salmon. I thought to myself. Baked salmon and pasta would sound real good . I’ll even add some spinach and grape tomatoes. Toss that and dinner is served. “Now doesn’t that sound good ?” I asked my oldest daughter . She says ” yes, everything but the spinach and grape tomatoes” . Of course, isn’t that what most kids would say …. right?
Ingredients (Balsamic Vinaigrette Marinade)
1 cup Balsamic vinaigrette dressing
1/4 teaspoon cayenne pepper
2 cloves garlic, chopped
1 tablespoon Dijon mustard (or any mustard )
2 tablespoons of chopped Italian herbs
2 sprigs of thyme
1 tablespoon honey or maple syrup
4 6-ounce salmon fillets
2 pieces of aluminium foil – big enough to wrap the fillets
Combine the balsamic vinaigrette, cayenne pepper, garlic, thyme, mustard , and honey . Place the fillets on the aluminium foil. Drizzle the balsamic vinaigrette mixture over the salmon fillets . Fold and close the edges of the aluminium foil.Place on a baking tray and baked for 10 to 20 minutes

Ingredients (Penne w/Spinach & Grape Tomatoes)
Penne pasta cooked (1 box)
2 cloves garlic – chopped
1 cup grape tomatoes – cut in half
2 cups of fresh spinach
2 tablespoons olive oil
2 tablespoons of butter
Heat olive oil and butter in large skillet,add garlic and saute for 2 mins, add spinach and grape tomatoes and let that all sauté for about 5 minute more on medium heat.Add penne pasta and toss.
*** I use the juices from the baked salmon and toss that into the pasta
